Ingredients:

  1. 6 eggs
  2. 3/4 cup soy sauce (try 1/2 first so it’s not too salty)
  3. 5 star anise
  4. 2 tablespoons black tea (or 2 tea bags)
  5. 1 cinnamon stick
  6. 1 teaspoon sugar

Preparation steps

  1. Place the eggs in a medium pot and fill with water to cover the eggs. Bring the pot to a boil, lower the heat and simmer for 6-8 minutes.
  2. Remove the eggs (leaving the water in the pot) and let cool under running cool water, cool enough to handle.
  3. Using the back of the spoon, gently tap the egg shell to crack the shell all over. Be careful not to peel off the shell and return the eggs back to the pot.
  4. In the same pot, add the tea bags, soy sauce,sugar, star anise, cinnamon. Bring the mixture to boil and then turn the heat to low. Simmer for 50 minutes, cover with lid and let eggs steep for a few hours or overnight.
